Healthy Protein Banana Bread
Banana breads are great, right? They are even better when you can also have a bite of nutritious ingredients with ti! This recipe has a great balance of three flours: whole wheat, lupin and almond flour. I love it because it’s:
Incredibly tasty.
Super easy to make.
Filling because of the extra protein.
Not crazy sweet.
Healthy ish!
Simple Ingredients
Bananas
Lupin flour
Whole wheat flour
Almond flour
Coconut sugar
Baking powder
Dark chocolate chips
Plant-based milk
Apple cider vinegar
Vanilla extract
Where to get lupin flour? I can only get white sweet lupin flour online these days, but so worth it! I buy it directly from Small Town Specialties. It’s non-GMO from California.
Gluten free: for a GF option, replace the whole wheat flour with oat flour.
Sweetener: While I use coconut sugar for this recipe you can use dates or raisins if you prefer… or any sweetener you have. You will need to adjust the amount based on the type of sweetener you use though. If you use dates for example, you will also need less plant based milk because of the dates moist.
Dark chocolate chips: I make this recipe with extra chips when I am going to share it in a party, but I use very little when I make it for myself. Your call!
How to Make Vegan Protein Banana Bread?
You need a mixing bowl and the oven.
Mash the bananas and then mix it with the rest of the wet ingredients.
On a separate bowl, mix the dry ingredients and then pour wet mix and stir.
Fold in the chocolate chips.
Bake it.

Protein Banana Bread
This fantastic protein banana bread has lupin flour to increase the protein content instead of a protein powder. It’s a wonderful afternoon treat, and it’s also eggless, oil free, nutritious, and tastes too good!
Ingredients (US Customary)
- Dry ingredients:
- 1 cup lupin flour
- 1/2 cup whole wheat flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 2 tsp baking powder
- Pinch of salt
- 3/4 cup dark chocolate chips
- Wet ingredients:
- 1/2 cup + 1 tbspn plant-based milk (I use almond milk)
- 2 ripe medium sized bananas
- 1/2 tbsp apple cider vinegar
- 1/2 tsp vanilla extract
Ingredients (Metric)
- Dry ingredients:
- 120 grs lupin flour
- 65 grs whole wheat flour
- 56 grs almond flour
- 95 grs coconut sugar
- 2 tsp baking powder
- Pinch of salt
- 130 grs dark chocolate chips
- Wet ingredients:
- 135 ml plant-based milk (I use almond milk)
- 2 ripe medium sized bananas
- 1/2 tbsp apple cider vinegar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 360 F (182 C)
- Mix dry ingredients in a bowl.
- Mix milk and bananas in the food processor (just pulse 2-3 times to make sure the bananas are properly smashed). Alternately, mash the bananas with a fork and then mix with the rest of wet ingredients.
- Pour wet mix into the dry mix and stir it all together with a spoon until smooth.
- Add 3/4 of the chocolate chips and mix slowly. Pour the mix into a baking pan (I use a baking pan 8.5”x8.5”) and add the rest of the chocolate chips on top.
- Bake for 25-30 min. It took 30 min in my oven.... but every oven is different, so better to test with a toothpick! It’s fine if it's a little bit sticky.
- Let cool and enjoy!!
Notes
Sweetness: another option is to skip the sugar, it would be still slightly sweet because of the bananas. If you don’t use a sweetener maybe add an extra 1/2 banana.
Lupin flour: if you cannot find it in your country, replace with chickpea flour.
Gluten free option: use GF oat flour instead whole wheat.
